SALMON WITH BLUEBERRY SAUCE

INGREDIENTS

Salmon

6oz fillet wild Alaskan salmon, 1 fillet per person

Blueberry sauce

1/2 c. frozen or fresh blueberries

 

 

 

 

INSTRUCTIONS

Preheat oven to 375 degrees.

Simmer blueberries in saucepan until reduced. Blueberries should have wrinkly appearance

Stir continuously until blueberries look soft and liquid forms. If too dry, add 1 tablespoon of water.

 

Place salmon fillet in oven, and bake for 6 minutes

After 6 minutes, coat Salmon filets with Blueberry Sauce. Return to oven and bake for another 12 minutes. Once cooked, salmon should flake easily. Do not overcook.

Plate with sides of your choice and enjoy!
